Food Safety training
Level 3 Award in Supervising Food Safety
This is a level 3 food safety course, which replaces the Intermediate Certificate in Food Safety, and looks at the subject of the level 2 award in much more detail. Candidates get a greater understanding of food poisoning bacteria and contamination, and ways to prevent this happening, at a more supervisory level.
The Level 3 Award in Supervising Food Safety course is designed for those working in all food businesses at supervisory level. This includes ‘traditional’ supervisors and team leaders, but also anyone who needs a broad understanding of food hygiene as part of their work.
Among those who would benefit are managers and supervisors in medium and large manufacturing or catering businesses
This course is aimed at supervisors and chefs, who may have to instruct others in matters of food safety.
The qualification covers the following topics:
• Legislation
• Supervisory management
• Temperature control (chilling, cooking)
• Cleaning
• Contamination control
• Applying and monitoring good hygiene practices
• Implementing good food safety procedures
• Contributing to the safety training of others
The course is run over 3 full days, usually over 1-2 weeks.
A two-hour, 60 multi-choice question paper or a 2 hour written examination at the end.
Pass mark - 40/60 questions. Credit pass 50/60.
Candidates should have completed the Level 2 Award in Food Safety in Catering or similar
C.I.E.H., R.S.P.H. or H.A.B.C.

or Level 3 Award in Food Safety Supervision for Manufacturing
or Level 3 Award in Food Safety Supervision for Retail
